These blueberry pomegranate popsicles are deliciously sweet, tart and so perfect as a fruity summer dessert! Made with just 3 ingredients, they are easy to prep for kids and adults alike to enjoy on a hot day.

I don't think we ever have a summer family meet-up without the kids (and adults!) asking for an ice pop, and these pomegranate popsicles have become a new favorite. They're so fun, packed with nutritious fruits and quick to prep.
And just like my apple juice popsicles, the best bit is they can be made a few days in advance and just hang out in the freezer until the popsicle craving hits on a hot day! No need to run to the store for a package of popsicles.

Some notes to help guide you:
- Pomegranate juice - I use a 100% pomegranate juice from a bottle, such as POM juice (as I use in my pomegranate ginger mocktails) or a store own brand. I've also seen machines lately where you can juice fresh pomegranates yourself, which is fun. Or juice your own seeds in a blender, then strain.
- Blueberries - you can use fresh or frozen blueberries.
- Maple syrup - this is optional, but adds a touch of sweetness to balance the more tart pomegranate juice.

Change up the fruit ratios. If you prefer a sweeter popsicle, you can use more blueberries and a little less of the tangy pomegranate juice.
🔪 How to Make Pomegranate Popsicles
It's so easy to make these blueberry pomegranate popsicles with sweet fruits and maple syrup, and all you need is a high powered blender, fine mesh sieve and popsicle molds.
All the instructions are in the recipe card below, but these step by step instructions should help guide you.

Step 1: Combine and blend!
Add the blueberries, pomegranate juice and (optional) maple syrup to your blender cup and blend to a smooth consistency (image 1).

Step 2: Strain
This is an optional step, but I recommend it if you have the time. Place a fine mesh sieve over a bowl or jug and pour the mixture through (image 2). Use a wooden spoon to 'push' the mixture through, if needed. This will remove any blueberry skins that haven't fully blended down and give you a smoother texture.

Step 3: Freeze!
If you have 'flat' popsicle molds as I do, follow my mum's top tip and place them on a tray or board that can go in the freezer. Why? Well it's so much easier to get them in and out without any spills!
Carefully pour the blueberry pomegranate popsicle mixture into your molds (image 3), leaving a little space at the top (depending on the type of mold you have) to allow for expansion. Freeze for 4-6 hours, depending upon the size of the popsicles, until solid and frozen through.
💭 Recipe Tips and Notes
- Give the fruit mixture a sieve! For a smoother texture if you're using fresh blueberries, I do recommend to pour the blueberry pomegranate mixture through a fine mesh sieve to remove the blueberry skins.
- Have enough freezer time. If your popsicle molds are larger in size, they may need a little longer to freeze.

There are lots of different popsicle mold styles, with some where you 'peel' the popsicle out of them and other where running a little warm water over the mold helps loosen the popsicle.

Blueberry Pomegranate Popsicles (3 Ingredients)

Ingredients
- 3 cups blueberries fresh or frozen
- 1.5 cups pomegranate juice
- 2 teaspoon maple syrup

- Add the blueberries to your blender cup, then pour in the pomegranate juice and maple syrup.
