These apple juice popsicles are perfectly sweet, and so light and fresh as a summer dessert or snack! Made with just three ingredients, they are super easy to make for both kids and adults alike.

I'll admit I was a little taken aback that these apple popsicles are as tasty as they are the first time I made them! I didn't expect pantry staples to come together so well for a delicious summer treat. Fresh, light and perfectly sweet, they are so fun and fruity. All the family, whether adults, kids or babies, will love these easy to make ice lollies!

Perfectly sweet. The apple juice and elderflower cordial are a flavourful combination, and sweet without being overly sugary.

All the ingredients, and their quantities, are in the recipe card below.
For this apple juice popsicle recipe (also called ice lollies in the UK!) you will need:
- Apple juice - you can of course use juice you make at home with fresh apples, but if not then store bought is good too.
- Elderflower cordial - this isn't a necessity, but does give a nice touch of floral flavour to complement the juice.
- Apple slices - I suggest using red apples or a sweeter variety, rather than green, to add to the popsicles.
📖 Swaps and variations
Make your own apple juice. My low histamine readers may prefer to make their own juice with fresh apples, rather than using a carton. Check for any other added ingredients in the juice, and whether they are suitable for you, if using the latter.
Leave out the apple slice. I like the slice of apple hidden inside the popsicles (the kids do too!), but you can leave out if you prefer.

🔪 Step by step instructions
These apple popsicles require very little work, and the freezer does most of it for you!
Step 1
Pour the apple juice and elderflower cordial into a jug and stir to combine (image 1).
Step 2
Pour the juice mixture into your popsicle molds, making sure to leave a little room at the top for the stick (image 2). Transfer to the freezer.
Step 3
After an hour or so check the popsicles. If they are almost solidified, add a slice (or half slice) of apple to the popsicle, along with the stick (image 3). Return to the freezer for at least six hours or until fully frozen.
Step 4
Loosen the popsicles by running warm water on the sides of the molds. Then serve immediately and enjoy!
💭 Recipe tips and notes
- Stir the juice mixture well. Make sure to combine the juice well with the cordial before pouring into your popsicle molds.
- Add the stick once almost solidified. Depending upon the type of mold you have, you want to add the stick just before the popsicle has solidified so it doesn't sink (or go wonky, as in my photos here, whoops . . .)
- Leave to freeze for at least six hours. I tend to find that overnight is better to be sure they are frozen solid, but around six hours usually works.

Apple Juice Popsicles
Equipment
- Popsicle mold
- Jug
Ingredients
- 3 cups apple juice
- 1 tablespoon elderflower cordial optional
- 1 small apple sliced
Instructions
- Pour the apple juice and elderflower cordial into a jug and stir to combine.
- Pour the apple juice mixture into your popsicle molds, leaving a gap at the top of the mold for the apple slices and stick. Place in the freezer.
- After about an hour check the popsicles and if the juice has almost solidified, push an apple slice (or half slice) into each mold, along with the stick. Return to the freezer and freeze for at least 6 hours or until they are frozen solid.
- Use warm water to loosen the popsicles, then enjoy!
