🫐 Ingredients

Some notes on a few of them:

  • Ricotta - you want to use unflavored fresh ricotta that comes in a tub and can be whipped in a food processor.
  • Blueberries - I suggest to use fresh blueberries for this recipe. Frozen blueberries can be used in a pinch, but will release a little liquid so the compote will be more watery unless you cook it down more.
  • Bread - use the type that works best for you, or see the swap ideas below.
  • Honey - use runny honey for sweetness. Maple syrup can be used as a swap.

📖 Swaps and variations

Swap bread for rice cakes. If bread isn't for you, then rice cakes make an easy swap. You can also try oat cakes if they work for you.

Change up the berries! Blackberries would be equally delicious, or perhaps do a mix of blue and blackberries.

🔪 Step by step instructions

Making this blueberry ricotta toast recipe is super simple, requires just 5 ingredients and has all easy recipe steps.

All the instructions are in the recipe card below, but these step by step photos should help guide you.

Step 1: Make a blueberry compote

Add blueberries to a pan along with honey and a teaspoon of water. Heat for 4-5 minutes so the blueberries partially break down (I like to leave some of the berries whole). Press against the blueberries with a wooden spoon to help them along if you like (image 1).

Step 2: Make whipped ricotta

Add the ricotta cheese to a food processor and blend for about 10 seconds so that it is light and fluffy in texture (image 2).

Step 3: Toast your bread

Toast your bread until it is light golden brown under a broiler, in an air fryer or skillet, or in a toaster, as my UK readers will likely do! (image 3). As above, rice cakes can be used as a swap.

Step 4: Assemble the toasts

Generously spread your toast with the whipped ricotta, then spoon on the blueberry compote. Sprinkle over fresh thyme leaves and then enjoy! (image 4).

💭 Recipe tips and notes

  • Use an unflavored ricotta cheese.
  • Adjust the amount of honey to taste. Add more if you have a sweet tooth!
  • Frozen blueberries can be used, but will release a little liquid and take a little longer to make compote.
  • As a change from a compote, you can also top your whipped ricotta with roasted blueberries.
  • For a heartier recipe you can swap out the blueberry compote for blueberry chia jam.

Can you make these blueberry toasts in advance?

I don't suggest to make and assemble the toasts too long before you enjoy them as the cheese and blueberry compote will make the toast too moist.

Which type of bread is best for blueberry ricotta toasts?

Use the type of bread that suits you best, or rice or oat cakes as a swap.

Can I add more toppings to the toast?

Of course! A sprinkle of pumpkin seeds, crushed macadamia nuts, almonds (if suitable) or hemp seeds would be good.

  • Having a fun weekend brunch? Serve with some bubbles such as my lychee mint mocktail or peach mocktail.

Equipment

  • Food processor or stand mixer

Ingredients
 
 

  • ¾ cup blueberries fresh or frozen
  • ½ cup ricotta
  • 1 teaspoon honey
  • 2 slices bread rice cakes as a swap
  • ½ teaspoon fresh thyme leaves

Instructions
 

  • Gently heat blueberries and honey in a pot with a teaspoon of water for 4-5 minutes, until they have slightly broken down so you have some whole blueberries and some syrup. Set aside to cool.
  • Spoon the ricotta into a food processor and whip for 5-10 seconds until it is light and fluffy.
  • Toast your bread in a toaster, air fryer or under the broiler.
  • Spread the toast with whipped ricotta, then spoon on the blueberry compote. Sprinkle over the fresh thyme leaves.

Notes

  • Use an unflavored ricotta.
  • Fresh or frozen blueberries can be used. It will take a little longer to use frozen berries as they thaw then heat in the pot.
