    Celery Cucumber Juice

    Fresh and light, this celery cucumber juice is packed with healthy vitamins and minerals! A delicious hydrating juice that can easily be made in a juicer or blender in just 5 minutes.

    I always used to think that making juice at home would be a slightly annoying and time-consuming process, but I couldn't have been more wrong!

    This celery apple cucumber juice is so simple to make in either a juicer or blender and so beautifully green too! It's lighter than a smoothie and feels especially perfect for summer or those times when you want a pick-me-up with a vitamin-packed juice.

    ⭐ Why this juice is so good

    Bursting with vitamins! We raid the fridge for fruits and vegetables that are packed with all the good stuff and have so many health benefits.

    Light and hydrating. With the high water content of its ingredients, this celery cucumber juice is perfect for summer or year-round as a pick-me-up.

    Versatile recipe. We can either use a juicer to make this juice, or a blender and cheesecloth or nut milk bag.

    🥒 Ingredients

    All the ingredients and their quantities are set out in the recipe card below.

    Some notes on a few of them:

    • Celery and cucumber - pick fresh unbruised produce for the best flavor and health benefits.
    • Apple - I suggest using a red apple as it will add a nice sweetness to the juice and balance out the slightly bitter taste of kale and celery.
    • Kale - I use curly kale, but lacinato kale also works well.

    📖 Swaps and variations

    Swap kale for other greens. If kale isn't your thing, then other greens will work well (but will change the flavor slightly). Or simply leave out!

    Leave out the apple. I do think it adds a lovely sweetness, but if you want to simply do green veggies then leave out.

    🔪 Step by step instructions

    While you can of course use a juicer, I'm going to walk you through how to easily make this celery cucumber juice in a blender:

    Steps 1 & 2

    Dice the fruit and vegetables into small chunks, and remove the skin of the ginger. Add all the ingredients to your blender cup and then blend to a thick smoothie-like texture (images 1 & 2).

    Step 3

    Place a cheesecloth (or muslin cloth or nut milk bag) over a large bowl and pour the celery cucumber mixture into the centre (image 3).

    Step 4

    Gather up the sides of the cloth and then use your hands to strain the juice through the cloth and into your bowl (image 4). Squeeze hard as a lot more juice comes out than you would think!

    Serve immediately and enjoy!

    💭 Recipe tips and notes

    • Whether to peel the cucumber or not depends upon your taste preference. It will be a lighter flavor if you peel, and personally I find it easier to digest.
    • Roughly dicing the fruit and vegetables simply makes it easier to add them to your blender cup - it doesn't have to be precise.
    • Squeeze well as a lot more juice comes out than you think!
    • If citrus works for you, add a squeeze of lemon juice or lime juice.

    Is it better to make this celery cucumber juice in a juicer or blender?

    Both ways to make this juice work well! If you have a juicer then it takes a few minutes less, but using a blender and then straining through a nut milk bag is very quick and easy to do. See my guide on making juice without a juicer for more information!

    How far in advance can I peel and chop the vegetables?

    It's always best to prepare fruit and vegetables just before use as they can lose their nutrients fairly quickly.

    Do you have to peel the cucumber?

    Peeling the cucumber is down to taste preference. If you like a lighter juice, then peeling the cucumber is a better option.

    How can I sweeten this celery juice?

    The apple will add sweetness to the juice. If you prefer a sweeter taste then you can add another apple to the recipe.

    How long does juice last?

    It's always best to serve juices immediately so you get all the healthy vitamins and minerals. The juice will also separate if left for too long.

    🥒 Celery cucumber juice benefits

    Celery has become almost famous for being *the* healthy food to juice hasn't it. Let's have a look at some of the nutrients it provides . . . As Healthline describe in their overview of the health benefits of celery, this green vegetable is a good source of vitamins A, C and K, as well as beta carotene, flavanoids, potassium and folate.

    Known to be hydrating, cucumber has a high water content. In their information on the nutrients of cucumber, Medical News Today note that it contains vitamin K, as well as a range of B vitamins, vitamin A and antioxidants.

    Ingredients
      

    • 1 English cucumber peeled, diced
    • 5 celery sticks diced
    • 1 apple core removed, diced
    • 1 cup kale hard stems removed
    • 1 cm fresh ginger skin removed

    Instructions
     

    • Add all the ingredients in your blender and blender to a thick smoothie-like consistency.
