⭐ Why these fruity popsicles are so good
Few ingredients. You only need fruit, coconut milk and maple syrup to make these creamy peach popsicles.
Healthy sweet treat. So much better for you than store-bought popsicles that often have all kinds of strange ingredients!
Easy to make. A very simple recipe, the hard bit is waiting for them to be freeze before you can enjoy them!
🍑 Ingredients
This really is a few ingredient recipe, with lots of healthy fruit and a touch of maple syrup for extra sweetness.
- Peaches: the loveliest fruit in summer, and full of sweetness. Make sure they are ripe for the best flavour.
- Cherries: OK, so this doesn't go along with the peaches and cream theme I know, but if you like you can add a small handful for some extra flavour. But optional - up to you!
- Coconut milk: the type in a can rather than a pouring carton (that you would use for coffee). Gives the lovely creamy flavour without using dairy.
- Maple syrup: for a touch of extra sweetness
Make sure to see the recipe card below for the full ingredient and their quantities!
🔪 Step by step instructions
I almost feel bad about this recipe, because it's just so simple! But that makes it perfect to make at home during the summer months.
Steps 1 & 2
Add your ingredients to a Nutri-Bullet (what I use) or a blender, and blend for a few seconds. If you want to have a few chunks of fruit then leave it there, or blend for a few seconds more for it to be all combined.
Step 3
Pour the mixture into a jug, and then pour into your popsicle molds. Leave to freeze for at least six hours then enjoy!
💭 Recipe tips and notes
- The maple syrup is optional, and for extra sweetness.
- Adjust the quantities of peaches to the size of your fruit.
- The cherries are optional, but add a nice flavour!
- Always leave to freeze for at least six hours. They will be too soft before that.
